Food Friday | Paleo Pancakes

If you've read my little blog before, you know that I am doing the Paleo diet.  Well, it's not really a diet, but more a way of eating clean and healthy.  You can read more about Paleo HERE.  Or just check out this nifty infographic from Our Paleo Life :)

As all things go, the paleo lifestyle also has some controversy and there are things that some consider paleo and others don't!  Paleofying regular foods is one such topic, since the cavemen & women did not have ovens or stoves!  That being said, I am perfectly fine with it.  Paleo desserts and cookies are definitely healthier for you than the regular stuff and as long as you realize these things are just treats, just like the regular stuff, you'll be ok. 

So, the hubs and the kids still eat regular pancakes occasionally on the weekends and usually I'll just make my regular eggs & sausage or something.  But, sometimes I just want something different than eggs for breakfast, so I began looking for a paleo pancake recipe.  I tried one that called for applesauce that was honestly, not very tasty.  Then, I came across this recipe, here.

These are the ingredients I used:

3 large eggs

1 T water

1 T vanilla extract

2 T buckwheat honey

1 1/2 c almond flour

1/4 t sea salt

1/4 t baking soda**

coconut oil, for cooking

I then mixed the ingredients following the recipe!  Be sure to cook them slowly so they don't fall apart!

I liked this one because the pancakes look like regular pancakes and the consistency is much closer too.  They are a little bit dry, but I put a little bit of ghee and organic maple syrup on top and they were fine. I also love to add fruit on top or on the side! Since I'm the only one eating these right now, I froze the batch and have been able to defrost them by putting 3 in the microwave for 30 seconds then I put them in the toaster oven for a min or 2 to get them crispy on the outside :)

I'm still looking for another recipe that does not use nuts (almond flour) since my daughter is allergic and I'd love for them to have a healthier alternative to bisquick pancakes.  I've seen some that look promising and are made with bananas.  I'll be trying PaleOMG's recipe next time for sure!! You know how much I love her!!!
